Tory cooking is traditional 18th-century New England stuff, called "American" or "Colonial" IOW. Burlington has culinary influences from Montreal and NYC/Brooklyn as well as the more recent ones. IOW, I was commuting weekly from Amherst to Montreal when I wrote this and wound up stopping frequently in Burlington VT to eat. The Church Street pedestrian mall would fit right into Burlington NY, but I doubt any analog of my favorite sushi restaurant existed there in 2001, much less 1973.
